Activity Overview / Details
Each table group will pick a pathogen from folded pieces of paper in a bowl. The pathogens include e. coli 0157:H7, salmonella, staphlococcus aureus, norovirus, hepatitis A, and giardia.
They will be given an article or information sheet about their microorganism and also given access to the ServSafe textbook which includes a chapter on microorganisms (chapter 2). This lesson can easily be done with out the ServSafe text if the teacher does not have access to that text.
Each group will be given a clear transparency and 2 different colored transparency markers.
Students will be given until the end of the period (usually about 20 minutes) to read through the materials and complete their transparency. If they finish with extra time left they are to transfer the information on their microorganism to their own chart. At the end of the period they will turn in their transparency. I will check them all for completeness. If any major information is missing, they will be given the first 5 minutes of the next class period to add the information. Then presentations will begin.
